Liz Mack
My name is Liz, I am Mat’s sister, (younger obviously!) and his fellow director at Stray’s.
I completed both a National and Higher National Diploma in Business and Finance at Loughborough College, and then said I would help in the then family business of bookshops whilst I decided what I wanted to do – the rest is history…
Liz Mack
Co-founder of Stray's CoffeeLiz’ no-nonsense approach might and sense of urgency, means that you may not recognise her when you visit Stray’s – it’s hard to focus on fast moving objects!
“I think that, as a growing business, it’s important to remember that we are still a family and at the heart of that, our people need to know we care about them…
Liz has scoured suppliers, looking to source as much local produce as possible. She has the unenviable task of balancing costs with quality so that everyone wins.
“I want to be fair with suppliers and pay fair prices for a good service – not easy, but anything worth doing, is rarely easy…
“The food at Stray’s is a simple concept. Great quality produce, made fresh on site and served in three different ways; a sandwich, jacket or salad. And no tightwad portions!
Likewise our cakes. All made in our own kitchens, to our own recipes. We have strict procedures in place, to ensure the quality is maintained and more recently, this has made it easier to make cakes in the new shops, to the same standard.
“The cakes are a throwback to when I used to watch my mum baking, eagerly waiting to be given the first taste of the new cake…
Consistency is key...
So while co-founder Mat may be the creative, full-on half of this sibling pair, Liz is the person who makes it all stick. Mat has new ideas and Liz makes them work in the business – a dynamic team indeed…
Liz’s approach to the kitchen operation at Stray’s has meant the shops have consistently been awarded 5 star food hygiene scores from their respective local authorities.
